How to make the most delectable caramelized onions to put on or in ANYTHING
Are you an Onion person? I'm an onion person... Probably too much of an onion person to be honest. I love onions. 🤤 This recipe is a short one but packed with onions. Did I mention how much I love onions? Anyway, as the great Shrek and donkey once said:
Shrek: Ogres are like onions.
Donkey: They stink?
Shrek: Yes. No.
Donkey: Oh, they make you cry.
Shrek: No.
Donkey: Oh, you leave em out in the sun, they get all brown, start sproutin’ little white hairs.
Shrek: No. Layers. Onions have layers. Ogres have layers. Onions have layers. You get it? We both have layers.
Donkey: Oh, you both have layers. Oh. You know, not everybody like onions.
I'm no ogre, but these onions ARE going to stank of perfection and make you cry tears of joy. And if you don't like onions after this?... I'll just have to ask you to GET OUT OF ME SWAMP! Just kidding. I do love onions though. Spoiler alert!!! Onions ahead! God I love onions.
Ingredients
2-3 Big ol' Yellow Onions
1 tbsp of Olive oil
Half stick of butter
1.5 cups Apple Cider!
Salt and Pepper
Step 1: Let’s Get Started
Cut up those onions however you prefer. I personally like big onion strands so I usually just half them, and then cut with the grain.
Step 2: Season those thangs.
Once you've cut up your onions, place them in a bowl and season with salt and pepper. Toss them around in the bowl to make sure they are all covered. Then coat them all in your olive oil.
Step 3: Sizzle Sizzle
Heat up a cast iron pan on medium to high heat. If you don't have cast iron, you can use a dutch oven or any pot/pan big enough. Throw in your half stick of butter and let it melt. Once melted throw in those onions baby. Cook in the oil/butter mixture for about 10 minutes.
Step 4: Apple Cider!
Once the onions have softened a tad, pour in your apple cider. This part takes a little while, but SO worth it. Once your little onions are swimming in a pool of cider, you just toss them around while the cider boils away. As the cider reduces you'll notice your onions browning. This is good. Keep gently folding them over each other to prevent breakage.
Step 5: FIN
After about 20 or so minutes, (depending on your heat level and pan) your onions should be looking like this. At this point, throw them in whatever dish you had planned for the night! Or... you could just eat them alone. They're that good.
