Apple Cider monster Mashed

The most scrumptious side dish with a cider flare



Fast and easy

I've always had a taste for the sweeter things in life. I love baking deserts! But, my son wanted to try this. We always look for ways to spice up some of the more "basic" foods, so we thought why not add some cider to the mashed potato party! The combination of these two is simple, yet soooo satisfying. It's easy to make and can be prepared the night before if you're short on time that day. Just keep them refrigerated separately until you're ready to plate. Cooking this side dish with apple cider elevates it with just enough sweetness, but keeps that savory base in tact. With every bite this monster mashed becomes a distant memory and just like that, your potato party is over... Leaving you with, I've should have made more!


Apple Cider Monster Mashed


I bravely tasted and tested this monster mashed at all stages of its conception...you know, for science. I was pleasantly surprised how the sweetness of the apple cider compliments the onions and mushrooms and the rich, savory taste this potato side dish has. Here is everything you need to make this recipe perfect!


Ingredients (For two servings):

  • 1 cup Apple Cider

  • 1 large onion

  • 1 container of fresh mushrooms (precut or whole your preference)

  • 2 large potatoes

  • 4tbsps of butter (reserve 1-2 for the potatoes)

  • salt and pepper to taste

  • 3 tbsps of milk (substitutions:heavy cream, half and half, light yogurt or sour cream or just as is. (optional)

Directions:

  1. Peel and cube the potatoes no bigger than two inches.

  2. Place a sauce pan with water on the stove, bring to a boil and add potatoes. (You'll know they are done when you poke a potato with a fork and slides off)

  3. Chop the onions so you have some long strands and dice up your mushrooms.

  4. Place a frying pan on the stove over medium heat.

  5. Add your butter, onions and mushrooms. Cook until onions start to caramelize. (browned in color) about 5min

  6. Add your apple cider, turn up to medium-high heat.

  7. Continuously stir and when the liquid starts to reduce and thicken, remove from stove. Set aside.

  8. Drain potatoes and place them back in your pan. Add salt, pepper and milk (Optional)

  9. To mash potatoes use a hand mixer or you can smash them by hand for two minutes. Keep this up until they reach the consistency you like.

  10. Plate your monster mashed (or smashed) then place your apple cider caramelized onions and mushrooms over the top.

  11. Voila... It Was a Graveyard Smash!
