A Cidery twist on a home classic!
I don't know about all of you, but I am a carb king. I'm also an apple cider enthusiast too so I thought, why not combine my two favorite things around Fall time. Now, I'm not the most cultured or experienced chef out there, so I try to get by with some of the easy stuff. Breakfast has become a specialty of mine over the years and pancakes are one of the easiest things to cook first thing in the morning! This recipe has been stress tested with quite a few variations so strap in as we take a sweet cidery journey to pancake town.
Apple Cider Pancakes

Now as I said, I am NOT a professional chef. I'm just an average guy looking to apple spice things up in the kitchen every now and then... I can do another recipe from scratch if everyone wants, but for now lets keep it easy shall we?
Grab your favorite box of pancake mix (I use Aunt Maple's Pancake and Waffle mix, but any of the other brands will do)
2 cups of the above pancake mix
½ cup (1 stick) salted butter, room temperature
1 Tablespoon of ground cinnamon
1 large egg
¼ cup apple slices (optional)
1 ½ cups of your favorite apple cider! (Of course now there are a TON of different types. I use the Swetango Apple Cider from Wegmans)
Honey (To drizzle)
Let's Get After It!
Let's start by making that batter. First in a large bowl, add your 2 cups pancake mix, 1 Tablespoon cinnamon, 1 egg and 1 and a half cups apple cider and mix away. Be sure not to over mix, but you'll know the batter is ready when it's still a bit runny, but thick enough that it wont run all over when you put it in the pan or skillet. (If batter is too thick you can add some milk to the batter to thin it out)
Heat up a skillet or pan under medium to low heat.
Add in a slice of that butter once the pan is up to heat and let it melt in the pan.
Once your butter is fully melted in your pan, go ahead and pour in some of the batter. You can get all technical and measure out 4 inches of pancake if you want to, but if you're like me and are eyeballing, just make sure you have a big enough pan and hefty enough spatula to flip these bad boys. They be THICC.
After about 4-5 minutes, they should be ready to flip. Now, for bonus points, you can test your culinary skill and flip em without that spatula. I tried it... 10/10 would not recommend.
Once the other side has cooked for a minute or two, you can plate that pancake and move onto the next.
Once you are out of batter and IF you measured, you should have 12 4-inch pancakes. In my case, I had 4... large pancakes.
At this point you're almost done! Pour yourself a nice cold glass of Apple cider and cut up some small apple slices to put over the pancakes. Drizzle with Honey and BOOM! Apple Cider Pancakes.
