A Most Bewitching Brown Sugar Chicken

This one is a regular in our house. It's truly a Fall favorite and the best part is that it's all treats. NO TRICKS! Get ready for a ghoulish good time because this one is as easy as it is sweet!


Bewitching Brown Sugar Chicken


Let's get started with some ingredients:


  • ½ cup (1 stick) salted butter, room temperature

  • 1½ cup packed dark brown sugar

  • 1-2 lbs chicken breast

  • 2 cloves garlic (finely chopped)

  • Thyme springs (2-3)

  • Rosemary sprigs (2-3) (chopped)

  • ¼ cup sherry cooking wine

  • Salt & Pepper (to taste)

The HOW


Now before we get to cooking, you can pair this with a few other recipes we have here on Haunters HQ! It depends on how hard you want to go for dinner, but it'll worth it, I promise. A few "staples" for us at home are the Monster Mashed Potatoes and Apple Cider Caramelized Onions. Check those out to elevate this whole thing!

  1. First things first. Let's get a large bowl and your spices ready.

  2. Chop up your rosemary, thyme and garlic and throw them in.

  3. You can put your salt and pepper in there as well if you like or you can season the chicken directly. (It is all going in the same bowl so I just like to throw it all in one bowl)

  4. Cut your chicken breasts up into bite size pieces.

  5. Throw your chicken into the bowl of spices and mix it all up. Make sure that each bite is thoroughly coated.

  6. Get a pan on the stove and set it on high heat. (Cast Iron works great for this, but if you don't have one no worries!)

  7. Coat the pan in your oil of choice and once the oil begins to smoke throw in your chicken

  8. Lets all the edges of the chicken sear until you see some color.

  9. Turn the heat down to about medium and throw in your sherry cooking wine and butter.

  10. As those melt down and simmer away, keep tossing your chicken for about 6-10 minutes.

  11. You should still have some of the buttery sherry liquid in the pan (not too much, but enough). Now throw in your brown sugar and make sure to toss until it is all coated

  12. You can leave it a bit liquid or you can crank up the heat for a minute if you want more of a sauce!


And there you have it! If you added in the Onions and Mashed I mentioned earlier, you should have something that looks quite like this...
