Marbled Cream Cheese Pumpkin Muffins

I love this recipe because you can get creative with color. Just use those brains my zombie friends!

THE HOW


  1. Pre heat oven to 350 degrees. Place large paper liners in muffin tins or if you would prefer not to, just make sure you grease your muffin tins. It makes 12 large muffins or 24 mini muffins.

  2. Mix the 7 dry ingredients together in a large bowl.

  3. In separate large bowl whisk 2 eggs, and the two sugars together. (brown and white) Incorporate until smooth...about 40 seconds.

  4. Then add to the wet mixture the pumpkin and oil. (Now would be the time to add 1 or 2 drops of orange food coloring.)

  5. Take your dry ingredient's and add to it the pumpkin mixture.

  6. In a small bowl mix the cream cheese, 1 egg, 4 tbsp of sugar until creamy.

  7. Divide 1/3 of the cream cheese mixture into 3 small bowls. One bowl make it black. The next bowl purple. The last bowl leave plain .

  8. Scoop your pumpkin mixture in your muffin tins. (If you have a small melon scoop thats a great size for the mini muffins. For the large muffins use a medium to large size melon scoop)

  9. Take a ½ teaspoon of each color of the cream cheese mixture and place on top of pumpkin muffin mix. Use a full tsp for the large muffins.

  10. Take a tooth pick or a fork and swirl or fold the cream cheese ever so slightly. you want to see defined swirls.

  11. Place in preheated oven and bake for 13-15 min for the mini's and 20-23 min for the large muffins. Check with a tooth pick! If it comes out clean they are done!
